How to make it:

  1. Heat the olive oil in a frying pan and fry the onion rings briefly until they soften.
  2. Add the sugar and allow the onions to caramelize slightly. Pour in the balsamic vinegar and fry for another minute until all the ingredients are well mixed.
  3. Mix the Old Amsterdam cheese spread with ricotta and season with the zest of 1/2 lemon, salt, and freshly ground pepper.
  4. Spread the mixture over the focaccia and then top with the lettuce, olives, ham, and balsamic onions.
  5. Drizzle with a little extra olive oil and top the focaccia with extra shaved Old Amsterdam cheese!

Cooking tip!

In winter, this dish is also delicious with blanched kale or cavalo nero instead of lettuce!

How to make it:

  1. Preheat the oven or BBQ to 200°C.
  2. Place the bell pepper and garlic on a baking sheet lined with parchment paper (if using the oven) and drizzle with olive oil. Roast the bell pepper and garlic in the oven or on the BBQ for 20-25 minutes, checking occasionally to see if the garlic has caramelized and softened (if so, remove it). Allow to cool for a few minutes.
  3. Mix the bacon with the ground beef and season with salt and freshly ground pepper. Divide the ground beef into 4 flat patties, larger than the buns (the meat shrinks during cooking).
  4. Clean the bell peppers by removing the skin and seeds. Finely chop them, mix with the tomato tapenade, sambal, and Worcestershire sauce to taste. Finish with salt and freshly ground pepper.
  5. Now squeeze the garlic cloves and mix the roasted garlic with the mayonnaise and plenty of freshly ground pepper. Cook the burgers on the BBQ or in a frying pan for 4-5 minutes until done, place 1.5 slices of Old Amsterdam cheese on each burger and melt for approx. 30 seconds.
  6. Spread the bottom half of the burger buns generously with bell pepper salsa. Top the buns with the burger, lettuce, and pickled onions. Spread the top half with garlic mayonnaise and close the buns.

Cooking tip!

After cooking, let the burger rest for a few minutes under foil. This helps retain the juices and allows the Old Amsterdam cheese to melt beautifully over the meat.

How to make it:

  1. Soak the gelatin in cold water for 5 minutes. Meanwhile, melt the butter in a pan and add 100 g flour. Heat the mixture over medium heat for 3 minutes, stirring regularly. Pour in half of the milk and stir with a whisk. Add the rest of the milk when the sauce begins to thicken.
  2. Separate half of the eggs. Add the egg yolks and whipping cream to the sauce and bring to a boil. Set aside the egg whites. Remove the pan from the heat and stir the cheese into the sauce in batches. Squeeze out the gelatin sheets and stir them into the sauce. Season the sauce with mustard, curry powder, and pepper.
  3. Grease the baking dish and sprinkle with some flour. Pour the ragout into the baking dish, cover with plastic wrap, and let cool for 30 minutes. Let set in the refrigerator for another 2 hours.
  4. Use 2 soup spoons to scoop out equal portions of the croquette mixture. Dust your hands with flour and shape the mixture into croquettes. Beat the rest of the eggs with the reserved egg whites in a deep plate. Put the rest of the flour, breadcrumbs, and panko in separate deep plates. Dip the croquettes in the flour mixture, egg mixture, and breadcrumbs, in that order. Repeat this so that the croquettes are double-breaded, but this time only dip them in the egg mixture and breadcrumbs.
  5. Cover the croquettes with cling film and leave them to set in the refrigerator for another 2 hours.
  6. Heat the deep fryer to 180 °C and fry a maximum of 4 croquettes at a time for about 5 minutes until golden brown. Drain on paper towels.

  1. Preheat the oven to 200 degrees Celsius.
  2. Place the tomatoes with a sprig of rosemary and garlic on a baking sheet lined with parchment paper, drizzle with olive oil, and season with salt and pepper.
  3. Roast the tomatoes in the oven for 15 minutes.
  4. Finely chop the needles from the other sprig of rosemary together with the anchovies, mix with mayonnaise, and season with lemon zest and juice.

How to make it:

  1. For the pickles, peel the shallots and carrots and cut them into bite-sized pieces. Halve the cucumber and remove the seeds with a spoon. Cut the cucumber into 1 cm thick slices.
  2. Boil the vinegar with sugar, water, salt, and herbs. Simmer the carrots and onions for 2-3 minutes.
  3. Rinse a jar with hot water, add the cucumber and dill, and fill with the cooked vegetable and vinegar mixture. Leave to cool overnight.
  4. For the snack platter, cut the Old Amsterdam Original into bite-sized cubes.

  1. Heat a generous dash of olive oil in a large frying pan. Remove the casing from the sausage, break the meat into pieces, and fry in the pan for 4-5 minutes until golden brown. Add the garlic, fennel seeds, chili, and 2 sprigs of sage.
  2. Cook briefly and deglaze with white wine. Allow the white wine to evaporate almost completely. Add the peeled tomatoes and chicken stock.
  3. Cover and simmer gently for 45 minutes. Stir, add the whipping cream, and simmer gently for another 45 minutes.
  4. Season the sauce with salt, the zest of 1 lemon, and freshly ground pepper.
  5. Heat a dash of olive oil in a frying pan and fry the remaining sage leaves until crispy.

How to make it:

  1. For the grilled green salsa: Peel the red onion and garlic. Wash the cilantro and pat dry. Place in a blender with the antipasti, vinegar, and oil and blend to a coarse salsa. Season to taste with salt and pepper.
  2. For the tomato salsa: Wash the vine tomatoes, cut into quarters, and remove the seeds. Finely dice the flesh and red onion. Mix with olive oil, pepper, and salt to make a fresh salsa.
  3. Wash the chili pepper and spring onion and cut into thin rings.
  4. Grill the Old Amsterdam Tasty Grill Sweet Chili on both sides until golden brown on a hot grill.
  5. Heat the corn tortillas according to the instructions on the package.
  6. Spread sour cream on the warm tortillas and top with the grilled green salsa.
  7. Cut each Tasty Grill into 6 strips and place 3 on each tortilla.
