  1. Peel the shallots, chop finely, and simmer gently for 15 minutes with mustard seeds, apple juice, and vinegar until soft.<\/li>\n
  2. Finely chop the celery, blanch for 30 seconds in boiling salted water, and cool in ice-cold water.<\/li>\n
  3. Wash the apple and cut into cubes, mix the cornstarch with a little water and stir into the boiling shallots to thicken the relish.<\/li>\n
  4. Season with salt and pepper, allow to cool, and mix with apple and celery.<\/li>\n
  5. Toast the sourdough bread slices with a little oil in a pan for 2 to 3 minutes.<\/li>\n
  6. Wash and dry the watercress and pick the leaves.<\/li>\n
